- Vinification: Malvasia grapes are harvested by hand in boxes. Approximately 20% of the grapes are harvested later to obtain a higher concentration of sugar and aroma. Gentle pressing, static clarification of the must, and slow fermentation for 30 days at a controlled temperature of around 16°C. The part of the white wine harvested later matures for 12 months in French oak barriques, the rest in steel tanks
